IHCL played host to the culinary master & his two-starred Michelin restaurant La Villa Lorraine as part of its rendezvous series
The culinary soiree showcased his signature flavours paired with a handpicked selection of beverages.
The epicurean celebration was a classic showcase of world-class cuisine amidst the conversations and interactions with the culinary maestro – Yves Mattagne, who specialises in seafood presentations, contemporary world cuisine and eclectic gastronomical experiences.
The curated menu featured signature flavours such as Tiger Shrimp – melon, watermelon, cassis, chili pepper & lime; Flamed Hamachi – oyster, Granny Smith, cucumber, shio, wasabi; Scallops – nappa cabbage, coral, combava; Lamb – harissa, smoked eggplant; and delectable vegetarian creations such as Flamed Avocado – plankton, daikon, red shiso, cucumber; Green Asparagus – wild mushrooms, yellow wine sauce, caramelized onions; Smoked Eggplant; Guyot Pear – cardamom, red wine, macadamia.
Earlier this year, Chef Yves Mattagne and Taj Mahal came together for a similar culinary soirée in Delhi and Mumbai. After the success of the collaboration, IHCL was delighted to collaborate with Chef Yves Mattagne and present a special Rendezvous where Chef unraveled the culinary secrets of a contemporary world as he recreated the spirit of La Villa Lorraine at The Chambers.
